This elegant dish brings together the richness of chocolate and the delicate sweetness of poached pear, elevated with subtle red wine notes. It’s a classic French-style dessert that balances indulgence with simplicity ideal for moments that call for a touch of sophistication.
Ingredients
Poached Pears
- Ripe pears: 04 no (peeled but stem left on)
- Red Wine: 350 ml
- Water: 100 ml
- Sugar: 100 g
- Cinnamon stick: 10 g
- Orange peel: 3 g
- Star Anise: 1 no
Chocolate Sauce
- Dark chocolate: 100g
- Heavy Cream: 150 ml
- Butter: 1 tsp
- Honey: 1 tsp
- Pinch of sea salt
Method
Poach the Pears
- In a saucepan, mix red wine, water, sugar, cinnamon stick, orange peel, and star anise.
- Bring to a simmer and stir until the sugar dissolves.
- Gently add the peeled pears. Reduce heat and gently simmer for 20–25 minutes, turning pears occasionally until tender.
- Remove pears and set aside. Let the poaching liquid reduce for another 10–15 minutes if you want syrup to drizzle as shown in the picture.
Make the Chocolate Sauce
- In a small saucepan, heat cream until it just begins to simmer.
- Remove from heat and add chopped chocolate, butter, honey and a pinch of salt.
- Let it rest for couple of minutes and then stir until smooth and glossy.
Assemble
- Pour the chocolate sauce in dessert plate.
- Place a pear upright on each plate.
- Pour over the warm red wine sauce generously.
- Garnish with melted white chocolate and mint leaves
