Ingredients
Peels and core from 1 pineapple
1 cup of unrefined sugar
1 stick of cinnamon
3 cloves
7-8 cups of filtered water
Method
To prepare our signature Tepache, start by rinsing the pineapple thoroughly. Cut away the peel and chop the remaining pulp to extract the core. In a large pitcher, combine the pineapple peels, unrefined sugar, cinnamon stick, cloves, and filtered water.
Cover the pitcher with a muslin cloth or lid and let it rest in a warm place for 24 hours. During this time, skim off any white foam that forms on the surface using a spoon. Repeat this process over the next 2-3 days until the Tepache becomes sparkling.
Once the fermentation is complete, strain the liquid into another pitcher and allow it to rest for an additional 24 hours. Finally, store the Tepache in the refrigerator until ready to serve.
When serving, pour the Tepache over ice. This sweet, light, and refreshing drink boasts juicy pineapple flavors with a delightful hint of bubbles. It’s the perfect probiotic beverage to enjoy poolside this summer as a welcoming treat.
